Vegan Lasagna Soup

This is an easy one-pot recipe for Vegan Lasagna Soup. It has all the classic flavors of a lasagna, in the form of a hearty soup. All you need are basic pantry ingredients and 25 minutes to make this comforting soup!

Lasagna soup is meaty, cheese, and oh-so-cozy. It’s a perfect bowl of deliciousness to keep you warm during the cold winter nights!

Ingredients You Need

Here’s a list of the ingredients you will need to make this Vegan Lasagna Soup.

  • lasagna noodles
  • olive oil
  • onion
  • garlic
  • vegan mince
  • vegetable broth
  • a can of diced tomatoes
  • tomato paste
  • Italian seasoning
  • dried oregano
  • dried basil
  • maple syrup
  • spinach
  • soy cream
  • salt
  • pepper

for garnish (optional)

  • fresh basil
  • vegan shredded cheese
  • vegan parmesan cheese

Ingredient Notes

Vegan mince – I used soy meat crumbles (TVP), but you can use any type of mince you like. You could also use red lentils instead of minced meat. If using lentils, use two-thirds the amount of vegan mince.

Tomato paste – for substitution, you can use ketchup

Vegan Cheese – for garnish, I used shredded cheese from Marusan, and homemade parmesan cheese.

How To Make Vegan Lasagna Soup

A detailed recipe is in the recipe card at the bottom of this post, but let me give you a quick overview of the process. From start to finish, it takes about 25 minutes.

  • Heat olive oil in a pan, and sauté diced onions and garlic until browned. Add the vegan mince and Italian seasoning and cook.

  • Pour in the veg stock, diced tomatoes, tomato paste, maple syrup and the rest of the herbs. Bring to a boil.
  • Once boiling, reduce heat and add the lasagna noodles. Cover and simmer for 15 minutes until the noodles are cooked. Stir occasionally to prevent noodles from sticking.
  • Once the noodles are cooked, turn off heat. Add soy cream and spinach, and stir. Add salt and pepper to taste.

  • Serve while warm. Garnish with fresh basil, vegan shredded cheese and parmesan cheese. Enjoy!

Ingredients

  • 1 tbsp olive oil
  • 1/2 onion diced
  • 2 cloves garlic minced
  • 180 grams vegan mince
  • 1/2 tsp Italian seasoning
  • 4 cups (950ml) vegetable stock plus more if needed
  • 1 can diced tomatoes
  • 1 tbsp tomato paste
  • 5 sheets lasagna noodles broken into 3~4 pieces
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tbsp maple syrup
  • salt and pepper to taste
  • 1 1/2 tbsp soy cream
  • spinach one handful

for Topping

  • fresh basil
  • vegan shredded cheese
  • vegan parmesan cheese

Instructions

  • Heat olive oil in a pan, and sauté diced onions and garlic on medium heat, until browned. Add the vegan mince and Italian seasoning, and cook for 2 minutes.

  • Pour in the veg stock, diced tomatoes, tomato paste, maple syrup, dried oregano and basil. Bring to a boil.
  • Once boiling, reduce heat and add the lasagna noodles. Cover and simmer for 15 minutes until the noodles are cooked.
    Stir occasionally to prevent noodles from sticking.
    Add more vegetable stock if the consistency is too thick.
  • After the noodles are cooked, turn heat off. Add soy cream and spinach, and stir. Add salt and pepper to taste.

ラザニアシート

オリーブオイル

玉ねぎ

ニンニク

ヴィーガンミンチ 大豆ミートでも、OmniPorkのような代用肉でも、ミンチであればOKです。赤レンズ豆も使えます!(レンズ豆を使う場合はヴィーガンミンチの2/3の量をお使いください)

野菜ストック(出汁)

カットトマト缶

トマトペースト 無ければケチャップでOK

イタリアンソルト

乾燥オレガノ

乾燥バジル

メープルシロップ

豆乳クリーム

サラダほうれん草

塩とコショウ

ヴィーガン・ラザニアスープ

Ingredients

  • オリーブオイル 大さじ1/2
  • 玉ねぎ、みじん切り 1/2個
  • ニンニク、みじん切り 2片
  • ヴィーガンミンチ 180g レンズ豆を使う場合は120g
  • イタリアンソルト 小さじ1/2
  • 野菜ストック(出汁) 950ml
  • カットトマト缶 1缶(400g)
  • トマトペースト 大さじ1 無ければケチャップでOK
  • ラザニアシート 5枚 大きめの一口大に割る
  • メープルシロップ 大さじ1/2
  • ドライオレガノ 小さじ1/2
  • ドライバジル 小さじ1/2
  • 豆乳クリーム 大さじ1.5
  • サラダほうれん草 ひとつかみ
  • 塩とコショウ お好みで

トッピングに

  • フレッシュパセリ
  • ヴィーガンシュレッドチーズ
  • ヴィーガンパルメザンチーズ 詳細は下部に

Instructions

  • 大きめの鍋にオリーブオイルを熱し、中火で玉ねぎとニンニクを炒める。色がついたら、ヴィーガンミンチとイタリアンソルトを加えて2分炒める。

  • 野菜ストック、トマト缶、トマトペースト、メープルシロップ、ドライオレガノとバジルを加えて、いったん煮立たせる。
  • ラザニアシートを加え、蓋をして弱火で15〜20分煮込む。
    煮込み中は:
    ・パスタがくっつかないように、何度か混ぜる
    ・煮詰まりすぎたら、野菜ストックで薄める
  • パスタに火が通ったら、火を止めて豆乳クリームとサラダほうれん草を加える。塩とコショウで味を整えたら出来上がりです。
