Smashed Lemon and Garlic Potatoes

Ingredients for Smashed Lemon & Garlic Potatoes

To make this potato dish, you need the following ingredients:

  • small yellow potatoes
  • olive oil
  • lemon
  • garlic
  • dry basil
  • salt
  • pepper

for topping (optional)

  • fresh parsley
  • flaky sea salt

How to make Smashed Potatoes

A detailed recipe is in the recipe card at the bottom of this post, but let me give you a quick overview of the process. It’s a very simple 4-step process:

Step 1: Boil the potatoes

Scrub the potatoes clean, and add them to a large pot. Add water and bring to a boil. Cook the potatoes until easily pierced by a knife, about 15~20 minutes. Drain well.

Step 2: Smash the potatoes

Place potatoes on a baking sheet lined with parchment paper. Use a potato masher and carefully smash the potatoes to flatten them. (You could also use a fork, or a glass jar with a flat bottom to smash them.)

Step 3: Coat the potatoes with sauce

Add the ingredients for the lemon garlic sauce to a small bowl, and mix well. Brush the potatoes generously with the mixture.

Step 4: Bake the potatoes

Bake the potatoes in a preheated 220 C/ 425 F oven for 20~25 minutes, until deep golden and crispy.

Sprinkle with chopped fresh parsley and flaky sea salt, and ENJOY!

How to Serve and Store

These smashed potatoes are best served warm, while they’re crispy. Enjoy them on their own as a snack, or as a side dish. I also love to add them as topping for hearty salads.

Ingredients

  • 500 grams (1 lb) small yellow potatoes
  • salt for boiling

Lemon Garlic Sauce

  • 2 Tbsp olive oil
  • 1 lemon juiced and zested
  • 3 cloves garlic pressed
  • 1 tsp salt
  • 1/2 tsp dry basil
  • 1/2 tsp black pepper

Topping

  • fresh parsley finely chopped
  • flaky sea salt

Instructions

  • Preheat the oven to 220C / 425 F .

Ingredients

  • じゃがいも 500 g 小粒のメークインや新じゃがいも
  • 茹で用

ガーリックレモンソース

  • オリーブオイル 大さじ 2
  • レモン 1 個分の汁とゼスト
  • ニンニク 3 片 ガーリックプレスでつぶすか、細かいみじんぎりに
  • 塩 小さじ 1
  • ドライバジル 小さじ 1/2
  • 黒胡椒 小さじ 1/2

トッピング

  • フレッシュパセリ 刻み
  • 粗塩 お好みで

Instructions

  • オーブンを220 C / 425 Fに予熱する。
  • じゃがいもを洗って、大きめの鍋に入れる。水と塩を入れ、中火で15〜20分茹でる。
    竹串を刺してスッと通ったら、ザルにあげる。
  • クッキングシートをした天板にじゃがいもを移し、ポテトマッシャーでつぶす。
    フォークや瓶の底でもつぶせます。

  • ガーリックレモンソースの材料を全てボウルに入れ、よく混ぜ合わせる。ハケでたっぷりじゃがいもに塗る。

  • 220 C / 425 Fに予熱したオーブンで20〜25分焼く。焼き色が付いたら出来上がりです。
    トッピングには刻んだパセリや粗塩をふって、お召し上がりください!
