Ingredients for Pan-seared Bok Choy
Here are the ingredients you’ll need:
- baby bok choy
- sesame oil
- soy sauce
- mirin
- vegan Worcestershire sauce
- maple syrup
- ginger
- garlic cloves
- cornstarch
- sesame seeds

Ingredient Notes
Baby bok choy – they are smaller, sweeter, and less bitter than regular-sized bok choy. You can also use regular, full-sized bok choy for this recipe, but they will take longer to cook.
Mirin – it’s a type of sweet rice wine that is commonly used in Japanese cooking. It has a unique flavor that is both sweet and slightly acidic, and it is often used as a seasoning in marinades, sauces, and glazes. Mirin is readily available at most Asian supermarkets and online.
Vegan Worcestershire sauce – it’s a great source of UMAMI (savory), especially for sauces that you want to thicken. You can also use vegan oyster sauce similarly.
How to make Pan-seared Bok Choy
A detailed recipe is in the recipe card at the bottom of this post, but here’s a quick overview of the process.
1. Cut baby bok choy in half, or in quarters depending on size. Wash under cold running water to clean between the leaves.
2. Heat sesame oil in a pan, and place sliced bok choy cut-side down. Add 1 Tbsp water, and cover with a lid. Cook on medium heat
2. While the boy choy is cooking, mix together the ingredients for the brown sauce. Set aside.
3. Remove the lid from the the pan, and flip each bok choy over. Cook on high heat for 1 minute. Remove bok choy from the pan.
4. Add the brown sauce to the pan, and simmer until sauce thickens. Pour the sauce over the plated bok choy, and sprinkle sesame seeds. ENJOY!

For the sauce
- 1 Tbsp low-sodium soy sauce or tamari
- 1 Tbsp mirin

- 1/2 Tbsp sesame oil
- 1 tsp ginger grated
- 1 clove garlic grated
- 1 1/2 tsp cornstarch
- 100 ml water
Instructions

Instructions
- フライパンにごま油を熱し、半分にカットしたチンゲン菜の断面を下にして並べる。中火で2分焼く。
- 水を大さじ1加え、蓋をして中火で3分焼く。
- 蓋をとり、チンゲン菜をひっくり返し強火で1分焼く。 焼けたら、皿にチンゲン菜を盛り付ける。
- タレの材料を混ぜ合わせて、トロミがつくまでフライパンで煮詰める。
- タレと白ゴマをチンゲン菜にかけて出来上がりです。
