Pecan Cranberry Granola

This pecan cranberry granola is one of my favorite granola recipes! The toasted pecans are nutty and crunchy, the dried cranberries sweet and tart. Enjoy it with your favorite nondairy milk, ice cream, or layer it with yogurt for a granola parfait.

Ingredients for Homemade Granola

In order to make the base of the granola, there are only 4 ingredients you need:

  • old-fashioned oats
  • oil – such as coconut oil or extra virgin olive oil
  • sweetener – my favorite is maple syrup
  • salt

To the base, you can add you choice of nuts, seeds, dried fruits and spices.

For this pecan cranberry granola, you need the following add-ins:

  • pecans
  • coconut flakes
  • dried cranberries
  • cinnamon

A detailed recipe with measurements is in the recipe card below.

How to make granola clusters

Anyone else love those yummy crunchy granola clusters? If you are partial to those large chunks in your granola, here are a few tips:

  • Half way through baking, take the granola out of the oven. Use a spatula and gently press down on the granola, firmly packing it into the baking sheet.
  • Once the granola is done baking, repeat the above process. Use a spatula and gently press down on the granola, firmly packing it into the baking sheet.
  • Let the granola cool completely before removing them from the baking sheet. As they cool, the clusters will form.
