Ingredients for Vegan Pepper Steak
Here are the ingredients you’ll need:
- soy curls
- bell peppers
- bamboo shoot
- vegan Worcestershire sauce
- cane sugar
- mirin
- cooking sake
- sesame oil
- soy sauce
- ginger
- cornstarch

Ingredient Notes
Soy curls – usually available at natural food stores or online. (In Japan) I use dried soy curls by Daizu Labo , available at most large supermarkets.
Bamboo shoot – (bamboo sprouts) I used ready-to-eat bamboo shoots that come pre-boiled and thinly sliced. They’re sold in most Asian supermarkets. If you don’t have bamboo shoot, you can use other veggies like carrots, asparagus, onion, or string beans.
Mirin – a type of rice wine with a slightly sweet, tangy flavor. It’s a staple ingredient for many Japanese dishes, especially since it pairs really well with soy sauce. It’s readily available at Asian supermarkets and online.
Cooking Sake – alcohol made from fermented rice, sake adds umami and a sweet, mellow flavor. It also eliminates strong odors. If you don’t have it, replace it with cooking wine, or water.
How to make Vegan Pepper Steak
A detailed recipe is in the recipe card at the bottom of this post, but here’s a quick overview of the process.
1. Rehydrate soy curls according to package and toss in cornstarch.
2. Heat cooking oil in a frying pan, and cook soy curls on medium heat until crispy. Add bamboo shoot and bell peppers, and cook for 2 more minutes.
3. Add the sauce to the pan, and cook until well combined. Serve with a bowl of white rice, and ENJOY!

Vegan Pepper Steak
Ingredients
- 200 grams rehydrated soy curls
- 1 Tbsp cornstarch
- 1 Tbsp cooking oil
- 4 green bell peppers very thinly sliced
- 100 grams bamboo shoot boiled and thinly sliced (see Ingredient Notes)
for the sauce
- 2 Tbsp vegan Worcestershire sauce
- 1 Tbsp mirin
- 1 Tbsp sake
- 2 tsp soy sauce
- 1 tsp cane sugar
- 2 tsp sesame oil
- 1 tsp ginger grated
Instructions
- Combine all the ingredients for the sauce and mix well. Set aside.
- Rehydrate soy curls according to package and toss in cornstarch.
- Heat cooking oil in a frying pan, and cook soy curls on medium heat until crispy, about 3 minutes.
- Add bamboo shoot and bell peppers, and cook for 2~3 minutes, or until bell peppers start to soften.
- Add the sauce to the pan, and cook on medium heat for 1 minute, stirring until well combined. Serve with a bowl of white rice, and ENJOY!

- 酒 大さじ 1
- みりん 大さじ 1
- 醤油 小さじ 2
- こま油 小さじ 2
- きび砂糖 小さじ 1
- 生姜、すりおろし 小さじ 1
Instructions
- 大豆ミートにコーンスターチをまぶす。油を熱したフライパンで3分くらい中火で焼く。
- フライパンにタケノコとピーマンを加えて、中火で2分炒める。
- タレを加える。全体を炒め合わせる。全体に味が馴染んだら、出来上がりです!
