Dan Dan Noodles
Dan dan noodles is a classic Chinese street food. In order to make AUTHENTIC dan dan noodles, you need several hard-to-find ingredients and a lot more time than just 20 minutes. So, consider this MY take on the Chinese classic: it’s vegan, takes only 20 minutes to make, and most ingredients are easy to find. I’ve also included substitute options in case some ingredients are not accessible for you.
Ingredients
Here’s what you will need to make dan dan noodles.
For the meat crumble:
- vegan mince
- shiitake mushrooms
- soy sauce
- sake
- mirin
- ginger
- garlic
- sesame oil
- chili flakes
- Gochujang
For the sauce:
- sesame oil
- tahini
- chili oil
- soy sauce
- ground black pepper
- black rice vinegar
- maple syrup
- water
To serve:
- noodles
- leafy geens, such as bok choy or spinach
- green onions
- sesame seeds

Ingredient Notes
For the meat crumble:
I use texturized vegetable protein (TVP), but any type of Vegan Mince will work.
Sake can be subbed with cooking wine.
If you don’t have Mirin, substitute it with 1 tbsp white wine or white vinegar and 1/2 tsp maple syrup.
Gochujang is a spicy chili paste popular in Korean cooking. It’s sold at most Asian markets and on Amazon. If you need a substitute, use another chili paste like Sriracha or Sambal sauce.
For the sauce:
If you don’t have Tahini, you can use peanut butter instead.
I use store-bought Chili Oil, but you can make your own if you’d like: Homemade Chili Oil.
Black Vinegar, a commonly used vinegar in Asian cooking, is sold at most Asian markets and on Amazon. It’s similar to white rice vinegar, but it is less acidic and has a slightly sweet flavor. If you need a substitute, use balsamic vinegar or white rice vinegar instead.
You can use any type of Noodles, but I often use either Chinese wheat noodles, or regular ramen noodles.
How to make Dan Dan Noodles
There are 4 basic steps to making vegan dan dan noodles.
- Cook the meat crumble – add the ingredients to a pan and cook to caramelize the meat, for about 5 minutes.
- Prepare the sauce – mix the ingredients in a bowl.
- Cook the noodles – boil the noodles according to package.
- Add everything to a bowl, stir and enjoy!

Vegan Dan Dan Noodles
Ingredients
For the Meat Crumble
- 1 tbsp sesame oil
- 120 grams vegan minced meat if using dehydrated mince, you need 120g of rehydrated meat
- 3 shiitake mushrooms minced
- 2 tsp soy sauce
- 1 tbsp mirin
- 1 tbsp sake
- 1 tbsp Gochujang
- 1/2 tsp ginger grated
- 1/2 tsp garlic grated
- 1 tsp chili flakes
For the Sauce
- 1/2 tbsp sesame oil
- 1 tbsp tahini
- 1/2 tbsp black vinegar
- 1 tbsp soy sauce
- 1 tbsp chili oil or more for added spiciness
- 1/2 tsp ground black pepper
- 1/4 tsp maple syrup
- 1/2 cup water
To serve
- 2 servings noodles
- handful of leafy green veg such as bok choy or spinach
- green onions for garnish
- sesame seeds for garnish
Instructions
Make the meat crumble
- Heat sesame oil in a pan, and add all the ingredients for the meat crumble. Cook on medium heat for 5 minutes to caramelize.
Prepare the sauce
- Add all the ingredients for the sauce to a bowl. Whisk to combine well.
Cook the noodles
- Boil the noodles according to package instructions.
Assemble the dish
- Add the sauce and noodles to a bowl and toss to coat. Top the noodles with the meat crumble, and garnish with green onions and sesame seeds. Add more chili oil to taste, and enjoy!

Ingredients
- 生麺 2玉
肉みそ
- ゴマ油 大さじ1
- 大豆ミート、ミンチ 120g 乾燥ミンチを使う場合は、水で戻した状態で120g
- 椎茸、みじん切り 3枚
- 醤油 小さじ2
- みりん 大さじ1
- 酒 大さじ1
- コチュジャン 大さじ1
- 生姜、すりおろし 小さじ1/2
- ニンニク、すりおろし 小さじ1/2
- 唐辛子フレーク 小さじ1
タレ
- コマ油 大さじ1/2
- 白ねりごま 大さじ1
- 黒酢 大さじ1/2
- 醤油 大さじ1
- ラー油 大さじ1 お好みで調整
- 黒コショウ 小さじ1/2
- メープルシロップ 小さじ1/4
- 水 1/2カップ
トッピング [量はお好みで]
- ゴマ
- 小ネギ
- ラー油
- チンゲン菜などの茹で野菜
Instructions
肉みそを作る
- フライパンにごま油を熱し、肉みその材料を全て炒める。水分がなくなるまで、中火で5分くら。
タレを作る
- ボウルにタレの材料を全て入れて、よく混ぜ合わせる。
麺を茹でる・盛り付ける
- 麺を表記通りに茹で上げる。タレと麺を混ぜて、からめる。
- 器にもって、肉みそをのせる。お好みのトッピングをのせたら出来上がりです!
