- 1 bunch (200g) broccolini
- 1 tbsp avocado oil
- 1 tbsp vegan butter
- 1 tbsp soy sauce
- 1 tbsp mirin
- salt and pepper to taste
Trim the bottom ends of the broccolini stalks, and cut any thick stalks in half lengthwise.
Heat avocado oil in a skillet on medium heat, and add the broccolini. Add a pinch of salt, and sauté for 5 minutes, until just tender.
Turn heat down, and add vegan butter, soy sauce, and mirin. Sauté on medium-low heat until the sauce dissipates. Season with salt and pepper to taste.
Plate and serve with lemon wedges, and ENJOY!
