Vegan "Pulled" Pork Sandwich

- 4 large king oyster mushrooms
- olive oil for frying
for the BBQ sauce
- 1 tsp smoked paprika
- 1 tsp chili powder add more to taste
- 1/2 tsp garlic powder
- 1/2 tsp brown sugar
- 1/2 tsp ground cumin
- 1 tbsp vegan Worcestershire sauce
- 1/2 tbsp ketchup
- 1/2 tbsp Dijon mustard
- a pinch of salt
- 1 tbsp water
for the sandwich
- 4 slices toasted bread
- 2 slices vegan cheddar cheese
- coleslaw, pickles optional
Shred the mushroom stems and caps using a fork.
Heat olive oil in a pan, and fry the shredded mushrooms on medium-high heat. Cook until the water released from the mushrooms evaporates, about 5 minutes.
Add all the ingredients for the BBQ sauce, and cook until the sauce thickens, about 5 minutes.
Serve on toasted bread with cheddar cheese, and coleslaw or pickles (optional). Enjoy!
