Vegan Lasagna Soup

This is an easy one-pot recipe for Vegan Lasagna Soup. It has all the classic flavors of a lasagna, in the form of a hearty soup. Lasagna soup is meaty, cheese, and oh-so-cozy. It's a perfect bowl of deliciousness to keep you warm during the cold winter nights!

Ingredients

  • 1 tbsp olive oil
  • 1/2 onion diced
  • 2 cloves garlic minced
  • 180 grams vegan mince
  • 1/2 tsp Italian seasoning
  • 4 cups (950ml) vegetable stock plus more if needed
  • 1 can diced tomatoes
  • 1 tbsp tomato paste
  • 5 sheets lasagna noodles broken into 3~4 pieces
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tbsp maple syrup
  • salt and pepper to taste
  • 1 1/2 tbsp soy cream
  • spinach one handful

for Topping

  • fresh basil
  • vegan shredded cheese
  • vegan parmesan cheese

Instructions

  • Heat olive oil in a pan, and sauté diced onions and garlic on medium heat, until browned. Add the vegan mince and Italian seasoning, and cook for 2 minutes.

  • Pour in the veg stock, diced tomatoes, tomato paste, maple syrup, dried oregano and basil. Bring to a boil.
  • Once boiling, reduce heat and add the lasagna noodles. Cover and simmer for 15 minutes until the noodles are cooked.
    Stir occasionally to prevent noodles from sticking.
    Add more vegetable stock if the consistency is too thick.
  • After the noodles are cooked, turn heat off. Add soy cream and spinach, and stir. Add salt and pepper to taste.

  • Serve warm. Garnish with fresh basil, vegan shredded cheese or parmesan cheese. Enjoy!
