Beetroot Hummus
This is a deliciously sweet and earthy beetroot hummus recipe, made with pickled beets.

- 1 14oz can chickpeas drained
- 1/2 cup pickled beetroot
- 2 tbsp aquafaba liquid from chickpea can
- 1 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 4 tbsp tahini
- 1~2 cloves garlic minced
- 1/2 tsp ground cumin
- salt to taste
Add all ingredients in a food processor and blend until smooth. Scrape down the sides of bowl as necessary.
Add more aquafaba if the consistency is too thick.
Serve with your favorite veggies, pita bread, or as a spread. Enjoy!
