Beetroot Hummus

This is a deliciously sweet and earthy beetroot hummus recipe, made with pickled beets.

Ingredients

  • 1 14oz can chickpeas drained
  • 1/2 cup pickled beetroot
  • 2 tbsp aquafaba liquid from chickpea can
  • 1 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 4 tbsp tahini
  • 1~2 cloves garlic minced
  • 1/2 tsp ground cumin
  • salt to taste

Instructions

  • Add all ingredients in a food processor and blend until smooth. Scrape down the sides of bowl as necessary.
  • Add more aquafaba if the consistency is too thick.
  • Serve with your favorite veggies, pita bread, or as a spread. Enjoy!
