Smashed Lemon and Garlic Potatoes

Lemony, garlicky, SUPER crispy smashed potatoes! These potatoes are fluffy and tender on the inside, crisp and crunchy on the outside. Try this recipe for the perfect potato side dish.

Ingredients

  • 500 grams (1 lb) small yellow potatoes
  • salt for boiling

Lemon Garlic Sauce

  • 2 Tbsp olive oil
  • 1 lemon juiced and zested
  • 3 cloves garlic pressed
  • 1 tsp salt
  • 1/2 tsp dry basil
  • 1/2 tsp black pepper

Topping

  • fresh parsley finely chopped
  • flaky sea salt

Instructions

  • Preheat the oven to 220C / 425 F .
  • Scrub the potatoes clean, and add them to a large pot. Add water and salt, and bring to a boil. Cook the potatoes until easily pierced by a knife, about 15~20 minutes. Drain well.
  • Place potatoes on a baking sheet lined with parchment paper.
    Use a potato masher and carefully smash the potatoes to flatten them. (You could also use a fork, or a glass jar with a flat bottom to smash them.)

  • Add the ingredients for the lemon garlic sauce to a small bowl, and mix well. Brush the potatoes generously with the mixture.

  • Bake the potatoes in the oven for 20~25 minutes, until deep golden and crispy on the edges.
    Sprinkle with chopped fresh parsley and flaky sea salt, and ENJOY!
