Vegan "Pulled" Pork Sandwich

Ingredients

  • 4 large king oyster mushrooms
  • olive oil for frying

for the BBQ sauce

  • 1 tsp smoked paprika
  • 1 tsp chili powder add more to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp brown sugar
  • 1/2 tsp ground cumin
  • 1 tbsp vegan Worcestershire sauce
  • 1/2 tbsp ketchup
  • 1/2 tbsp Dijon mustard
  • a pinch of salt
  • 1 tbsp water

for the sandwich

  • 4 slices toasted bread
  • 2 slices vegan cheddar cheese
  • coleslaw, pickles optional

Instructions

  • Shred the mushroom stems and caps using a fork.

  • Heat olive oil in a pan, and fry the shredded mushrooms on medium-high heat. Cook until the water released from the mushrooms evaporates, about 5 minutes.
  • Add all the ingredients for the BBQ sauce, and cook until the sauce thickens, about 5 minutes.

  • Serve on toasted bread with cheddar cheese, and coleslaw or pickles (optional). Enjoy!
