Vegan Cherry Crisp

A super simple, but VERY tasty summer dessert! Vegan Cherry Crisp is a sweet and tart cherry base, topped with a buttery crumbly crisp topping. You only need 15 minutes to prep this yummy summer favorite! (This is a small-batch recipe for 4 servings. Feel free to double or triple the ingredients to make a bigger batch!)

Ingredients

For the Cherry Base

  • 2 cups cherries pitted (fresh or thawed frozen)
  • 1 tbsp maple syrup
  • 1 tbsp cornstarch

For the Crisp Topping

  • 1/4 cup flour all-purpose or cake flour
  • 1/4 cup rolled (old-fashioned) oats
  • 3 tbsp coconut sugar
  • 2 tbsp vegan butter
  • 1/4 cup walnuts roughly chopped
  • 1/4 tsp baking powder
  • 1/2 tsp vanilla extract
  • a pinch of salt

Additional topping suggestions

  • non-dairy vanilla ice cream
  • non-dairy whipped cream

Instructions

  • Preheat the oven to 375 F / 190 C.
  • Add cherries, maple syrup and cornstarch to a bowl and toss to combine evenly.

  • In a separate mixing bowl, add all the ingredients for the crips topping and mix. Use your hands to incorporate the butter evenly.
  • Grease a baking dish and add the cherry base. Sprinkle the crisp topping over the cherries.
  • Bake in the oven for 30 minutes, or until the topping is golden brown.

  • Let it cool 10 minutes. Serve warm with a topping of non-dairy vanilla ice cream or whipped cream. Enjoy!
