For the Meat Crumble
- 1 tbsp sesame oil
- 120 grams vegan minced meat if using dehydrated mince, you need 120g of rehydrated meat
- 3 shiitake mushrooms minced
- 2 tsp soy sauce
- 1 tbsp mirin
- 1 tbsp sake
- 1 tbsp Gochujang
- 1/2 tsp ginger grated
- 1/2 tsp garlic grated
- 1 tsp chili flakes
For the Sauce
- 1/2 tbsp sesame oil
- 1 tbsp tahini
- 1/2 tbsp black vinegar
- 1 tbsp soy sauce
- 1 tbsp chili oil or more for added spiciness
- 1/2 tsp ground black pepper
- 1/4 tsp maple syrup
- 1/2 cup water
To serve
- 2 servings noodles
- handful of leafy green veg such as bok choy or spinach
- green onions for garnish
- sesame seeds for garnish
