Vegan Dan Dan Noodles

One of the BEST spicy noodle dishes ever! Dan dan noodles is noodles tossed in a spicy chili sauce, and topped with savory meat crumbles. This recipe will only take 20 minutes to make!

Ingredients

For the Meat Crumble

  • 1 tbsp sesame oil
  • 120 grams vegan minced meat if using dehydrated mince, you need 120g of rehydrated meat
  • 3 shiitake mushrooms minced
  • 2 tsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp sake
  • 1 tbsp Gochujang
  • 1/2 tsp ginger grated
  • 1/2 tsp garlic grated
  • 1 tsp chili flakes

For the Sauce

  • 1/2 tbsp sesame oil
  • 1 tbsp tahini
  • 1/2 tbsp black vinegar
  • 1 tbsp soy sauce
  • 1 tbsp chili oil or more for added spiciness
  • 1/2 tsp ground black pepper
  • 1/4 tsp maple syrup
  • 1/2 cup water

To serve

  • 2 servings noodles
  • handful of leafy green veg such as bok choy or spinach
  • green onions for garnish
  • sesame seeds for garnish

Instructions

Make the meat crumble

  • Heat sesame oil in a pan, and add all the ingredients for the meat crumble. Cook on medium heat for 5 minutes to caramelize.

Prepare the sauce

  • Add all the ingredients for the sauce to a bowl. Whisk to combine well.

Cook the noodles

  • Boil the noodles according to package instructions.

Assemble the dish

  • Add the sauce and noodles to a bowl and toss to coat. Top the noodles with the meat crumble, and garnish with green onions and sesame seeds. Add more chili oil to taste, and enjoy!
