Pecan Cranberry Granola
This is a quick and easy recipe for homemade pecan and cranberry granola. It's so delicious, you will never go back to store-bought ones. And, it's a lot healthier and cheaper to make your own!

- 3 cups old fashioned rolled oats
- 1 cup pecans roughly chopped
- 1/3 cup coconut flakes unsweetened
- 1/2 cup maple syrup
- 1/2 cup coconut oil
- 1/3 tsp cinnamon
- pinch of salt
- 1/2 cup dried cranberries
Preheat the oven to 150℃/300℉. Line baking sheet with parchment paper or silicone mat.
Place all the ingredients, EXCEPT for dried cranberries, in a large bowl. Stir to coat well. Spread the mixture out onto the baking sheet.
Bake for 25 minutes. Halfway through, stir the granola. To get clusters, use a spatula to gently press down and pack the granola into the baking sheet.
Once golden brown, remove granola from the oven and let it cool completely. Once cooled, transfer to a container and add the dried cranberries.
Serve with your favorite plant-based milk, yogurt, or ice cream. Enjoy!
