Vegan Cherry Crisp
A super simple, but VERY tasty summer dessert! Vegan Cherry Crisp is a sweet and tart cherry base, topped with a buttery crumbly crisp topping. You only need 15 minutes to prep this yummy summer favorite! (This is a small-batch recipe for 4 servings. Feel free to double or triple the ingredients to make a bigger batch!)

For the Cherry Base
- 2 cups cherries pitted (fresh or thawed frozen)
- 1 tbsp maple syrup
- 1 tbsp cornstarch
For the Crisp Topping
- 1/4 cup flour all-purpose or cake flour
- 1/4 cup rolled (old-fashioned) oats
- 3 tbsp coconut sugar
- 2 tbsp vegan butter
- 1/4 cup walnuts roughly chopped
- 1/4 tsp baking powder
- 1/2 tsp vanilla extract
- a pinch of salt
Additional topping suggestions
- non-dairy vanilla ice cream
- non-dairy whipped cream
Preheat the oven to 375 F / 190 C.
Add cherries, maple syrup and cornstarch to a bowl and toss to combine evenly.
In a separate mixing bowl, add all the ingredients for the crips topping and mix. Use your hands to incorporate the butter evenly.
Grease a baking dish and add the cherry base. Sprinkle the crisp topping over the cherries.
Bake in the oven for 30 minutes, or until the topping is golden brown.
Let it cool 10 minutes. Serve warm with a topping of non-dairy vanilla ice cream or whipped cream. Enjoy!
